Alpine-Mediterranean tradition with an international touch
Regional at heart, seasonal in its execution, cosmopolitan in its details – this is the theme of our gourmet hotel in South Tyrol. Head chef Simon Nikolussi combines seasonal, locally sourced products with carefully chosen international influences, refining them – where appropriate – with exceptional specialties such as truffles, Wagyu beef, or caviar. From 2026, Simon will present three menus – meat, fish, and vegan – which can be flexibly combined and represent a genuine, modern interpretation of the farm-to-table concept.
